When you don’t have much time to prepare dinner but you want a quick, easy and delicious meal, try this recipe. I cooked it for a friend and he described it as “scrump·tious”! This is a sweet and savory dish, but none of that run-of-the-mill sweet and sour dish taste you order from a Chinese restaurant. This one is a simple but elegant dish.
INGREDIENTS:
7-12 pieces of Shrimp
6 pieces of Button Mushrooms, small and cut into two
1/4 of Onions, slivers
1 Red Sweet Pepper, slivers
½ to 1 teaspoon of cooking oil
Soy Sauce, Kikkoman
3 to 4 tablespoon Ketchup, Heinz
1/2 to 1 teaspoon of Sugar
Salt
Pepper
White Rice, Steamed
DIRECTIONS:
Remove the shell from the shrimp, just leaving the tail. De-vein the middle part of its body.
In a pan, add a little oil and brown the onions. After three minutes, add the mushroom. Sautee’ two ingredients together then add the red pepper. Add a teaspoon of soy sauce to coat the vegetables. If the pan is drying while cooking add some water. Add the shrimp. Add ketchup, and additional soy sauce. Add a pinch of salt. Sprinkle sugar and adjust the amount according to your taste. Combine all ingredients together to coat them with the sauce. Add some water to adjust the consistency of the sauce, if necessary. Add pepper. It is cooked when the shrimp has turned pink.
Serve over a bed of teamed white rice.
Cooking time 7-12 minutes. Serves two.
